We want a rich and cold appetizer at the end of the day because the heat is very intense right now. You also don't want to spend three hours in the kitchen.


for 1 jar

Preparation time 10 minutes

2 canned artichokes in oil

1 clove garlic

1 tablespoon. balsamic vinegar

1 tablespoon. lemon juice


In the bowl of a food processor, place 1 can of drained artichokes and 1 can of artichokes with their oil.

Mix once.

Then add minced garlic, vinegar and lemon juice, salt and pepper. Blend until smooth.

Test and adjust the seasoning.

Keep refrigerated until ready to serve.

Today I'm going to show you two quick, simple and tasty spreads.


Dried tomato and pepper spreads

1 can of dried tomatoes

2 slices of bell pepper in oil

4 tablespoons pumpkin seeds

2 tbsp. ricotta (or silken tofu)


In the bowl of a food processor, place all ingredients and blend until smooth.

Keep refrigerated until ready to serve.



To accompany these spreads, I also made small seed cookies. I give you the recipe.

160g of flour

2 tbsp. White wine

3 tablespoons olive oil

Water

Pumpkin seeds, sesame seeds…


In a bowl mix the flour, seeds, salt and pepper.

Add the liquids and mix well. Add water little by little until you get a smooth ball of dough.

Flatten with a rolling pin. Use a pizza wheel to cut "tabs" of dough and bake at 180°C for 10 minutes.

Let cool on a wire rack and serve with the spreads.
